Recipe

Ingredients
- 50ml | 2oz Everleaf MOUNTAIN*
- 3 muddled strawberries
- 20ml | 0.75oz Verjus
- 20ml | 0.75oz honey water
- Orange Blossom Water
- Optional spoon of egg white or vegan replacement

Technique

Method
Add the strawberries into your shaker and muddle. Then add the Everleaf Mountain, Verjus, honey water, a couple of drops of orange blossom and the egg white, or alternative if you choose. Give a shake without ice to emulsify then fill with ice and give it a good shake. Fine strain into the glass to remove the strawberry pulp, garnish et voilà!

Home-made Ingredients

Honey Water
This is a great way to balance your cocktail without adding anything nasty or making it too sweet.

  1. Pick a good quality of honey ideally something from your local famers. Did you know that eating honey that has been made in your area can help with allergies like hay fever as the bees have pollinated flowers you are in contact with?

  2. Equal parts honey and hot water

  3. Stir until you melt the honey

  4. Keep the honey water in the fridge (it will last a week.)


Notes & Favourite Flavours

Everleaf MOUNTAIN* is low calorie, gluten free and vegan. It contains a blend of 12 sustainably sourced ingredients: cherry blossom, orris root, juniper, rosehip, strawberry, myrtle, everlasting, coriander, cherry, wormwood (A. absinthium), roman wormwood (A. pontica) and black carrot!

Verjus, meaning ‘green juice’, is made by pressing unripe grapes or other sour/young fruit to create an all-natural & highly acidic flavour. Originally used as a sour element in cooking when vinegar or wine were less readily available; its rich source of flavonoids and phenolic acids can stimulate the immune system, lower cholesterol, the incidence of strokes AND prevent liver inflammation. Its acidity is derived from the same source as wine so, while the pH is higher than both vinegar and lemon juice, verjus supports more delicate flavours. It is also naturally alcohol free! Experiment with its use instead of lemon or lime in mindful cocktails.
