Mermaid Gin* is natural & hand-crafted in the Isle of Wight by the Isle of Wight Distillery. They use 10 botanicals, all ethically sourced to make a smooth, complex and fresh gin. Mermaid is also plastic free and supporting marine conservation project and Net Zero meaning their activity has no impact on the climate as they offset their carbon emissions by supporting the planting of rainforest and seagrass meadows- this product couldn’t be more mindful!

Recipe

Ingredients
- 25ml | 1oz Mermaid Gin*
- 10ml | 0.3oz wine vinegar 
- Top up half & half Alain Milliat chardonnay grape juice* & London Essence tonic water*

Glass

Garnish
Rosemary, lemon & an olive

Method
Build your Bacchus Spritz straight into your glass. Start by filling the glass with ice right to the top, then pour in the gin and the wine vinegar. Top up half and half with the chardonnay grape juice and tonic water! Use a bar spoon (or table spoon) to gently stir your drink, making sure it is well mixed, but without disturbing the bubbles too much! Garnish with the rosemary, olive and a lemon wheel!

Notes & Favourite Flavours

Mermaid Gin* is smooth and complex with a contemporary style. It is fresh and citrusy on the nose, with sweet spice and gentle juniper. It has a peppery spice taste and an earthy sweetness with a hint of sea air from the locally foraged samphire. The finish is long, layered and complex!

Vinegar is a fantastic wellness ingredient (with possible benefits spanning lower blood-sugar levels, aiding digestion, & healthier skin & hair); vinegar provides a structure & bite especially important in no & low-alcohol cocktails, along with complexity and length.
