Mermaid Pink Gin* is made from fresh Island strawberries at the Isle of Wight Distillery. They are grown in the rich and fertile microclimate of the Arreton valley and are steeped in Mermaids smooth gin for four days, before being redistilled to create Mermaid Pink Gin. Infusing fresh strawberries with smooth but complex gin, creates a refreshingly layered serve and a great gin for the mindful drinker.

- 25ml | 1oz Mermaid Pink Gin*
- 25ml | 1oz rosé wine*
- 1 tsp grapefruit syrup
- Top up with tonic water*

Method
Fill your rocks glass to the brim with ice, then measure and pour your pink gin, rosé and homemade grapefruit syrup. Top up with tonic water, give a little stir to combine and add your juicy grapefruit segment. Simple and delicious!

Home-made Ingredients
Grapefruit Syrup:
Use a vegetable peeler to “zest” a grapefruit, the less pith the better as this tends to be bitter tasting.
Choose your non-refined sugar. We recommend birch syrup or monk fruit! You want to use the equivalent of 2 cups of ordinary sugar- check out our blog for help with converting your measurements.
Combine your grapefruit zest with the sugar or sugar substitute (plus a little juice if you want more ‘zing!’) Stir until the sugar appears slushy.
Cover & leave for a couple of hours (ideally overnight) in the fridge
Add 1 cup water to your sugar mix, then heat gently to dissolve
Strain out the grapefruit et voilà! Homemade grapefruit syrup.

Mermaid Pink Gin* is smooth, refreshing and complex. On the nose there’s aromatic strawberry, fresh citrus and gentle juniper. Bringing vibrant strawberry with a warm spice and a hint of sea air on the tongue. It’s perfectly balanced and is less sweet than most pink gins with no added sugar.
