Honey Water:
Honey water is a great way to balance your cocktail without adding anything nasty or making it too sweet.
Pick a good quality of honey ideally something from your local famers. Did you know that eating honey that has been made in your area can help with allergies like hay fever as the bees have pollinated flowers you are in contact with?
Equal parts honey and hot water.
Stir until you melt the honey.
Keep the honey water in the fridge (it will last a week or more.)

Fatty’s Organic Pink Grapefruit Spirit* : Half the alcohol, but all the flavour.
A distilled spirit 100% organic made with juniper, pink grapefruit and other beautiful botanicals, this spirit was meticulously crafted as an alternative to the traditional G&T. At just 20% abv it is only half the amount of alcohol you would expect from a traditional gin, but with all the flavour. One measure is just half a unit of alcohol.
The juniper bursts through on the front of the palate with subtle tones of succulent pink grapefruit shining through, this is a zesty flavoursome distilled spirit.
REAL Kombucha is one of our all time favourite Kombuchas. What is Kombucha you ask? It’s fermented tea and at REAL Kombucha they use a beautiful selection of teas with no added flavours. In this mindful cocktail we are using Royal Flush* produced from fragrant First Flush Darjeeling, picked by hand as the first tips of the tea emerge in spring. The Indian city of Darjeeling itself is known as Queen of the Hills and its First Flush is known as the Champagne of Teas.
The tea is richly fragrant and creates a brew that is fresh and floral. They add nothing, but the tea alone develops notes of rhubarb, white peach and a touch of blackcurrant. The fruit and spice flavours round out the acids to make it soft and delicate. It works beautifully in this cocktail.
