- 50ml | 2oz Penrhos Zero Raspberry*
- 20ml | 0.75oz lemon juice
- 3 raspberries
- 20ml | 0.75oz rosemary honey
- 1 egg white (optional or alternative)

Method
Pour your Penrhos Zero Raspberry, lemon juice, rosemary honey, egg white (or alternative) into your shaker & add your fresh raspberries, give it a good dry shake (shaking with no ice). Then add your ice to the shaker and give it a further firm shake, to chill and get all the juices out of the raspberries. Finally fine strain into your coupette & add your garnish of raspberries and rosemary. We recommend gently burning the end of the rosemary for extra aroma.

Rosemary Honey:
Infusing honey with rosemary is a great way to balance your cocktail and also add extra flavour.
Pick a good quality of honey ideally something from your local farmers. Did you know that eating honey that has been made in your area can help with allergies like hay fever as the bees have pollinated flowers you are in contact with?
Equal parts honey and hot water.
Add a few sprigs of fresh rosemary and gently heat.
Stir until the honey is melted.
Keep the Rosemary Honey in the fridge (it should last a week).
